Horchata and dulce de leche are not novelty syrups bolted onto an Italian menu; they are the flavors the founders grew up with, and they are treated as core. Alongside them sit the barrel-finished roasts \u2014 green coffee rested in emptied rum casks before roasting, which leaves a warm, boozy aromatic without any alcohol in the cup. They bought the Maricao property with intent rather than capital, kept several thousand of the old trees standing and put tens of thousands of new ones in the ground.<\/p>\n<p>Then, in 2017, Mar\u00eda took almost all of it. The crop was gone, the shops were shut, and the reasonable business decision would have been to stop.
