That origin \u2014 no culinary school, no corporate roastery apprenticeship, a machine in a walk-up \u2014 explains the shape of the business today, because people who learn that way tend to build for what they personally want to drink rather than for what will sell fastest. The rebrand to SEY, which is &#8220;yes&#8221; written backwards, came with the move into this industrial building on the Bushwick border in 2017.<\/p>\n<p>Two years later Food &amp; Wine named it the best coffee shop in America, a verdict that took a young Brooklyn roastery to the front of a national conversation. The counterweight to all that concrete and steel is greenery \u2014 plants cover the walls and hang from the ceiling in enough quantity that the room reads as a greenhouse with a coffee bar in it rather than as a warehouse with a few pots. That is consistent with everything else about the place: the counter&#8217;s attention goes into the coffee, and pastry is there so that a morning cup does not have to be taken on an empty stomach. Morgan Av on the L is the closest station and a short walk; from Manhattan it is a direct run under the river, which makes this easier to reach than its industrial surroundings suggest. Coming from elsewhere in Brooklyn, the L is still the practical answer, with a change at the Lorimer St and Metropolitan Av complex from the G.
